Mango Margarita

With summer around the corner and the AC's cranking up at our homes, margaritas are one of those drinks that I always reach out for. Summers, also being the season of mangos, gives me an additional joy to use this as an ingredient in almost anything I cook. I pureed these ripe mangos with some monkfruit sugar to give an extra kick of sweetness to it. You can make this drink in large batches and store the concentrate for almost a week. The recipe makes one big glass of margarita for you to cool off in the summer heat.
INGREDIENTS
3 Oz Mango Puree
2 Oz Tequila
1 Oz Cointreau
1 Oz Lime Juice
Margarita Salt
2 Tbsp Mango Chunks
Ice

INSTRUCTIONS
Take a lime wedge and rub it on the rim of a glass. Dip the rim of the glass into Margarita salt. The rim gets coated with the salt.
Fill the glass with Ice, Mango chunks and the remaining Mango Puree.
In a cocktail shaker, add some ice, 1.5 Oz of Mango Puree, Tequila, Cointreau, Lime Juice. Shake vigorously and pour it into the glass.
Give it a stir and top it off with a lime wedge and some mint.
