Almond Meal Plum Tart

It is that time of the year when you go for cherry, strawberries and plum picking here at California. Little did I know that the plum tree in my yard would give us a bounty full of fruits.

I remember running out to the yard and checking every day to see if any of the fruits are ripe enough. Couldn't really wait to taste them. The first few plums I picked were really sour (for obvious reasons ) . The second round of picks were a beauty indeed. These luscious fruits were one of the many reasons for me to start this food blog. It was a new beginning. And I am starting this journey on a sweet note. So here you go - Presenting to you Almond Meal Plum Tart :)


INGREDIENTS

Tart Shell:

  • 3 cups of All Purpose Flour

  • 2 Eggs

  • 2 1/2 Sticks of Butter

  • 1 Whole Lemon Zest

  • 1/2 cup Icing Sugar

  • 3 tbsp Milk


Almond Meal Filling:

  • 1 1/2 cups Almond Meal

  • 1 Stick of Butter

  • 1/2 cup Sugar

  • 2 Eggs

  • 1 Beaten Egg for Egg Wash

  • 1 tsp Vanilla Essence

  • Pinch of Salt

  • 10 Plums (depends on your tart pan size. Mine was a 10" pan)

  • 1/2 tsp cinnamon powder


INSTRUCTIONS

Tart Shell Prep:

  1. Place 3 cups of flour on a flat surface and add 2 1/2 sticks of cold butter, 1 whole lemon zest and 1/2 cup of icing sugar to it.

  2. Use your finger tips and mix the butter and sugar into flour well in a way that the resulting mixture becomes crumbly.

  3. Now add 2 eggs and 3 tsp milk into the above mixture and knead into a dough.

  4. Wrap the pastry dough using a plastic wrap and refrigerate it for 1/2 hour. Alternatively, you can refrigerate the dough overnight as well.

  5. Remove the pastry dough from the refrigerator and place it again on the flat surface.

  6. Make sure to flour the surface really well so that the pastry does not stick to the surface.

  7. Now using a rolling pin, roll the pastry dough and line your tart pan carefully. Trim the excess dough around the tart pan edges and using fork make several pricks to it.

  8. Pre-heat the oven to 375 F. Place a baking sheet filled with any kind of beans onto the pastry. Now bake the pastry in the oven for around 15 minutes until the edges become firm.

  9. Remove the baking sheet filled with beans and bake the pastry again for around 8 minutes.

  10. Remove the pastry from the oven and let it cool.


Almond Meal Filling:

  1. In a bowl, using an electric beater, beat a stick of butter and 1/2 cup of sugar on medium speed.

  2. Add 2 eggs, one by one to the mixture and beat at a low speed.

  3. Add 1 tsp of vanilla essence, 1/2 tsp of cinnamon powder, and a pinch of salt to the above mixture.

  4. Stir in 1 1/2 cups of almond meal to the above mixture.

Its time to decorate and bake our tart now :)

  1. In a small bowl, beat an egg. Brush the tart shell with this egg wash.

  2. Now fill in the tart shell with the almond meal filling and spread it throughout.

  3. Slice the plums and place them flat over the filling. I decorated the tart by placing the plum slices from the outer edge of the tart shell and worked my way towards the center.

  4. Pre-heat the oven to 400 F. Bake the tart for around 45 minutes or until it is cooked all the way to the center.

  5. Serve by sprinkling some sliced almonds and chopped mint and ice cream of your choice !!
